We love good casks, especially the big oak butts we take delivery of from Bodegas José y Miguel Martin in Huelva, Spain. These 500 litre oak casks have been ‘seasoned’ with Oloroso, a fortified wine that is made in Jerez and Montilla-Moriles. Oloroso wines tend to be dry, strong, and full-bodied in their character and usually have a dark and nutty flavour. These then help impart notes of dried fruits and spicy oak to whisky when the casks are re-used to mature new-make spirit. The size of these barrels are quite something to behold and take a bit of effort to roll but Rebecca seems to have found the knack!
